Easy Chicken Taquitos
Monterey Jack cheese
lime, zested and juiced
Preheat oven to 400 degrees.
Add chicken to a pot of boiling salted water. Cook for 12-15 minutes, or until cooked through. Transfer to a bowl and shred with two forks.
Add salsa verde and jalapenos. Mix well.
Wrap the stack of corn tortillas with a wet paper towel and microwave for 15-20 seconds to warm them up. This prevents tearing.
Place a spoon full of filling and a sprinkle of cheese in each tortilla. Roll tight and place seem side down on baking sheet.
Once all taquitos are rolled and on baking sheet, spray with oil and place in oven for about 15 minutes or until golden brown.
